I've noticed that young horses get given a bit of health when they complete a mission, and old horses lose a bit. But it's not a given stat?

only young horses that aren't at 100% health gain health doing anything. And they shouldn't be at 100% health so its a good thing really. Mortal horses over the age of 25 lose a little health every day, its not limited to lessons.
